Although many people associate kolaches with Texas, the pastry actually originated in the Czech Republic. Czech immigrants brought the traditional fruit-filled koláče to Texas in the late 1800s, where generations of bakers eventually adapted the recipe by filling the soft, slightly sweet dough with sausage, eggs, cheese and other savory ingredients.
